Now that we are getting settled into our new Chicago Apartment I have decided to start cooking again.
Lemon Chicken Pita with Greek Salad
Marinade:
Lemon zest and juiced
Garlic minced
A few sprigs of thyme and rosemary
1-2 tablespoons of dijon mustard
1/4 cup olive oil
salt and pepper
Mix and pour over chicken breast
Salad and Dressing
Mixed Greens
Cherry Tomatoes
English Cucumber
Red Onion
Feta Cheese
In the bottom of the salad bowl place red wine vinegar, olive oil, dried oregano, salt and pepper. Then wisk together. Place Chicken and salad over warm pita and ENJOY!
